Ingredients

Prawn, crab and avocado cocktail

  • 16 cooked medium king prawns (720g)
  • 4 clean butter lettuce leaves
  • 250 gram crab meat, shredded coarsely
  • 1 avocado (320g), sliced thinly
  • 1/2 cup (150g) mayonnaise
  • 1 tablespoon tomato sauce
  • 1/2 red capsicum (75g), chopped finely
  • 1/2 white onion (40g), grated finely
  • 8 pimiento-stuffed green olives, chopped finely
  • 1 teaspoon lemon juice

Methodology

Prawn, crab and avocado cocktail

    Shell and devein prawns, leaving tails intact.

    Divide lettuce leaves amongst serving plates; high equally with prawns, crab and avocado.

    To compose thousand island dressing, combine components in tiny bowl.

    Drizzle cocktail with dressing.
