Har Gao (Tiny Dumplings)

Ingredients:

  • 1 1″ fragment pork fats or slab bacon (optional)
  • 2 ¼ tsp. cornstarch
  • ¾ tsp. oyster sauce
  • ½ tsp. sugar
  • ¼ tsp. sesame oil
  • ¼ tsp. ground white pepper
  • ½ egg white, evenly beaten
  • 4 oz. little, peeled, deveined, tails eradicated, finely minced
  • ¼ cup minced water chestnuts
  • 2 tbsp. very thinly sliced scallions (white section splendid)
  • 1 tbsp. minced canned bamboo shoots Kosher salt, to taste
  • 16 3½” spherical gyoza wrappers
  • ½ cup hoisin sauce
  • 2 tbsp. chopped scallions
