Vegan Tzatziki

Ingredients:

  • * 2/3 cup of peeled and grated cucumber i use lebanese cucumber
  • * 1/2 cup uncooked cashew (soaked for as a minimum 3 hour)
  • * 1 clove of garlic – or extra while you enjoy it extra garlicky
  • * 1/2 tbsp additional virgin olive oil
  • * 1/2 tsp dry dill
  • * 1 tbsp chopped mint
  • * pinch salt
  • * juice of 1 little lemon

Instructions:

  1. Launch by peeling and grating your cucumber
  2. Add the total ingredients to a blender or food processor and mix except relaxed. Adjust to taste.
