Intention:

  • 1/4 cup extra-virgin olive oil
  • 1 tbsp. chopped flat-leaf parsley leaves,
  • plus a few leaves for garnish
  • 1 tbsp. chopped new sage leaves
  • (or crumbled dried sage)
  • 1/2 tsp. crimson pepper flakes
  • 5 cloves garlic (4 chopped, 1 complete and gently bruised)
  • 3/4 lb. squid, cleaned and cleave into 1″ items
  • 3/4 lb. small one octopus, cleaned and cleave into 1″ items
  • 1 tbsp. Homemade Tomato Paste
  • 1 cup dry white wine
  • 1 14-oz. can chopped tomatoes (with juice)
  • Kosher salt and freshly ground dusky pepper,
  • to model
  • 1 cup fish stock
  • 1 1-lb. monkfish filet, cleave into 2″ items
  • 1 1-lb. crimson snapper filet, cleave into 2″ items
